Green Peppercorns are simply unripe peppercorns. The aroma is somewhat piney, while the flavor is more herbaceous and a bit sweeter than black pepper, with less heat. Green pepper makes for an excellent addition to poultry, fish, vegetable, and milder game meats. In the regions where peppercorn vines can grow, fresh Green Peppercorns are often added to dishes as a garnish or as an ingredient to curry pastes.
